Have you tried Janis Joplin yet? "Piece of My Heart" you'd slay with your vocals, but there's not a lot for instrumentation, so you could give it a new hardness. Update "funny, just found your YouTube video for this, awesome".

I'm not a big female vocals fan, but there's just something captivating about Melody, I really enjoy her voice and range. You're all fun to watch. Abigail looks like she's having so much fun, show more of her.
Let me add another tune that I bet you never heard of. Kheedive from Styx (off their mission album) First let me say that I love brass and keys in my rock. Since you don't have a cousin who plays flugelhorn I will have to make due with what I get. Justin can essentially learn this as is (and I wish him the best at that tempo) Naturally the bass is added where you hear the pumping kick in a minute or so in, drums are to be interpreted starting around there (I would humbly say) and you need a second singer to genuinely chord those vocals. Once Sam kicks in as loud as that is, Justin will still have some play through and the amazing duality will haunt the audience to buy that album immediately. At that point you can charge anything and make a fortune.
The Outpost would be a great tune for you to explore. good Luck Abby, as Todd Sucerman is one of my fav drummers. but Time May Bend would be a great one too IF and only IF you can handle 7 4 time and if all four of you join on background vocals around Melody's lead sound. I think Styx, like Billy Joel are great bands to explore.
I agree with Joyusgard that there are two types of covers. You can do more Dio songs, and other metal sounds OR you can vamp up a song from a different genre.
With the latter in mind, I recommend STILETTO by Billy Joel. during the solo section I can hear Sam covering everything Sax, Ethan doing BJ's left hand bass line, and Justin can extrapolate the right hand into a two hand extravaganza. (For him, the volume needs to be louder than you currently balance things, and that is true on all songs). Abby can double bass the drums and we can add some vocals to make this zizzle.
You May Be Right, All for Laina, and a host of other BJ tunes are ripe for conquest. If Justine and Abby want to take on Root Beer Rag, I'm all for it. I played that one when I was Ethan's age, and I will hurt myself to try it again. <g> I wish you all the best with whatever tunes you inevitably select.
